- Topics: Earth System History - online
Earth System History examines the evolution of our planet from the Big Bang to the present. Topics include plate tectonics, evolution of life, the early atmosphere, and long-term climate change. Interpretation of geological records as evidence for change will be discussed. - General Biology I and General Biology II

- Topics: Food Chemistry
This course applies biological and chemical principles to food systems. The structures of macromolecules, organic and inorganic molecules found in food will be discussed. More specifically, the biochemical properties and reactions of carbohydrates, lipids, proteins, and other ingredients in both fresh and preserved foods will be covered in detail. Also discussed are the effects of food preservatives on food quality including texture, nutrition, and safety. - Nutrition - online

- Topics: Super Science for Elementary Teachers
Teachers of elementary-aged students must use an inquiry-approach to teaching science. This course provides an opportunity to enhance the practitioner's content knowledge in science and help to develop and refine instructional approaches to meet National and Massachusetts Standards for Science and Technology. Content in the areas of Life Science, Physical Science, and Earth Science and Engineering/Technology will be reviewed. The content will be enhanced by hands-on activity the practitioners can use in elementary classrooms.
Our summer sessions run May 26 - June 26 and July 6 - August 7. Registration begins on April 6.
